Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch pan.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, whisk together the eggs, vegetable oil, brown sugar, white sugar, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Gently fold in the chopped apples.
- Pour the batter into the prepared pan and smooth the top with a spatula.
Baking
- Bake for 30–35 minutes or until the cake is golden and set. A toothpick inserted in the center should come out clean.
- Allow the cake to cool before slicing it into squares.
Notes
This cake is delicious on its own but can be enhanced with whipped cream, vanilla ice cream, or powdered sugar. Store in an airtight container at room temperature for up to three days or refrigerate for up to one week. For longer storage, wrap and freeze.
