Preparation
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a bowl, mash the bananas with a fork until smooth.
- Stir in the melted butter, then mix in the sugar, egg, and vanilla.
- Sprinkle the baking soda and salt over the mixture, then fold in the flour gently.
- Stir in nuts or chocolate chips if using.
- Pour the batter into the loaf pan and level the top.
Baking
- Bake for 55 to 65 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then move to a rack to finish cooling.
Notes
Let the bread cool a little before slicing for cleaner cuts. If the top browns too fast, cover loosely with foil for the last 10 minutes.
