Bread Ingredients
  • 1 loaf French bread or Italian bread
Butter and Garlic Mixture
  • 1 stick unsalted butter, softened 115 g
  • 3 to 4 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley
  • a pinch Salt to taste
  • optional a pinch of red pepper flakes
Cheese Ingredients
  • 1 to 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with foil.
  2. Slice the loaf in half lengthwise, open it like a book, or cut into thick slices without cutting all the way through.
  3. In a bowl, mix the softened butter, minced garlic, parsley, and a pinch of salt until smooth.
  4. Spread the garlic butter evenly on the cut sides of the bread.
  5. Sprinkle mozzarella over the butter, then add Parmesan on top for extra flavor.
  6. Place the bread on the baking sheet, cheese side up.
Baking
  1. Bake for 10 to 12 minutes, until the cheese is melted and bubbling and the edges are golden.
  2. For a crisp, brown top, put the bread under the broiler for 1 to 2 minutes. Watch closely so it does not burn.
  3. Let cool for a minute, slice, and serve warm.

Notes

Use room temperature butter for easier mixing, and consider grating your own cheese for the best melt and flavor. Don’t skip the broil step for a golden, bubbly top.
