Main Ingredients
  • 1 lb. ground beef Choose lean ground beef for a healthier option.
  • 3 tbsp gochujang sauce Adjust the amount based on your spice preference.
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
Rice/Quinoa
  • 2 cups cooked rice or quinoa Prepare in a separate pot.
Fresh Toppings
  • 1 cup cucumbers, sliced
  • 1 cup carrots, shredded
  • 1/4 cup green onions, sliced Can also use sesame seeds or cilantro.

Preparation
  1. In a large skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat.
  2. Add chopped garlic and ginger to the beef, cooking until fragrant.
  3. Stir in the gochujang sauce, soy sauce, and sugar, and mix well. Let it simmer for a couple of minutes.
  4. Meanwhile, prepare your choice of rice or quinoa in a separate pot.
  5. Once the sauce is thick and the flavors melded, serve the beef over rice and top with fresh veggies.

Notes

This dish is versatile; feel free to add or swap ingredients based on what you have at home. Great for meal prep and keeps well in the fridge for lunch the next day.
