Method
 

Preparation
  1. Pat the chicken breasts dry and season both sides with salt and pepper.
  2. Heat the oil in a large skillet over medium heat.
Cooking
  1. Brown the chicken for 4 to 5 minutes per side, until golden, then remove to a plate.
  2. Lower heat, add the butter and minced garlic, cooking for 30 seconds until fragrant.
  3. Stir in the lemon juice and chicken broth, scraping the bottom of the pan.
  4. Return the chicken to the skillet and let it simmer for 5 to 8 minutes, spooning sauce over the chicken until it is cooked through.
  5. Stir in an additional tablespoon of butter and chopped parsley at the end for shine and color.

Notes

For the best results, use room temperature chicken and don’t rush the browning process for added flavor. Taste the sauce and adjust with lemon or salt to your liking. If the sauce is thin, simmer longer to thicken. Serve with rice or potatoes to soak up the sauce.
