  • 3 medium medium-sized carrots, peeled and grated
  • 1 tablespoon fresh ginger, grated Adjust based on taste preference
  • 1 tablespoon sea salt

Method
 

Preparation
  1. Peel and grate 3 medium-sized carrots.
  2. In a mixing bowl, combine the grated carrots with 1 tablespoon of grated fresh ginger.
  3. Add 1 tablespoon of sea salt to the mixture.
  4. Using clean hands, massage the carrots and ginger together for about 5 minutes to release juices and start fermentation.
  5. Pack the mixture tightly into a clean glass jar, eliminating air bubbles.
  6. Leave some space at the top of the jar for the vegetables to expand as they ferment.
  7. Seal the jar loosely to allow gases to escape.
  8. Let it sit at room temperature for 3 to 7 days, tasting daily until desired flavor is reached.
  9. Once fermented, store in the refrigerator.

Notes

Make sure your jar is sterilized to prevent unwanted bacteria. Keep carrots submerged in their juice for uniform fermentation. Adjust ginger for milder flavor if desired.
