Fluffy Banana Cottage Cheese Pancakes

Ingredients
  

Main ingredients
  • 2 ripe bananas, mashed Use ripe bananas for the best flavor.
  • 1 cup cottage cheese Low fat cottage cheese can be used.
  • 3 large eggs
  • 3/4 cup all purpose flour Measure flour by spooning into the cup and leveling.
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • as needed Butter or oil for the pan Use to grease the pan.

Method
 

Preparation
  1. In a bowl, mash the bananas until mostly smooth.
  2. Add the cottage cheese, eggs, and vanilla, then stir until combined.
  3. In another bowl, mix flour, baking powder, and salt.
  4. Add the dry mix to the wet mix and stir gently until just combined; do not overmix.
Cooking
  1. Heat a nonstick pan over medium low heat, and add a small knob of butter or a little oil.
  2. Spoon about 1/4 cup of batter onto the pan for each pancake.
  3. Cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes.
  4. Flip and cook the other side until golden, about 1 to 2 minutes more.
  5. Keep pancakes warm on a plate and repeat with the rest of the batter.
  6. Serve warm with your favorite toppings.

Notes

If the batter is too thin, add a tablespoon of flour at a time, if too thick, add a little milk or water. Keep finished pancakes in a low oven (~90 C or 200 F) to stay hot while making the rest.
