Preparation
- In a bowl, mash the bananas until mostly smooth.
- Add the cottage cheese, eggs, and vanilla, then stir until combined.
- In another bowl, mix flour, baking powder, and salt.
- Add the dry mix to the wet mix and stir gently until just combined; do not overmix.
Cooking
- Heat a nonstick pan over medium low heat, and add a small knob of butter or a little oil.
- Spoon about 1/4 cup of batter onto the pan for each pancake.
- Cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes.
- Flip and cook the other side until golden, about 1 to 2 minutes more.
- Keep pancakes warm on a plate and repeat with the rest of the batter.
- Serve warm with your favorite toppings.
Notes
If the batter is too thin, add a tablespoon of flour at a time, if too thick, add a little milk or water. Keep finished pancakes in a low oven (~90 C or 200 F) to stay hot while making the rest.
