Preparation
- Preheat your oven to 300°F (150°C).
- In a mixing bowl, combine 1 cup of cottage cheese and 3 large eggs. Blend until smooth.
- Add ¼ cup of almond flour, ½ teaspoon of baking powder, and a pinch of salt. Stir until well combined.
- Whip the egg whites from another 3 large eggs in a separate bowl until stiff peaks form.
- Gently fold the whipped egg whites into the cottage cheese mixture, being careful not to deflate the mixture.
- Line a baking sheet with parchment paper and spoon the batter into cloud shapes, about the size of a hamburger patty.
- Bake for 25-30 minutes or until they are golden brown on top.
- Allow to cool slightly before serving.
Notes
To ensure success, whip egg whites to stiff peaks, fold gently into the batter, experiment with seasonings, and avoid opening the oven door while baking.
