Ingredients
  

Main Ingredients
  • 4 medium Tomatoes (halved) Use ripe, in-season tomatoes for the best flavor.
  • 1 small Onion (cut into large chunks)
  • 1 cup Fresh cilantro
  • 1 medium Jalapeno (seeds removed and coarsely chopped) Adjust the spiciness by adding more or less jalapeno.
  • 3 cloves Garlic (coarsely chopped)
  • 1 tbsp Lime juice
  • 1/4 tsp Sea salt Check for salt before reaching desired consistency to prevent mushiness.

Preparation
  1. Combine all the ingredients in a food processor.
  2. Pulse until the salsa reaches your desired consistency.
  3. Check for salt a few pulses before reaching your desired consistency. If needed, adjust the salt and pulse again.

Notes

Fresh salsa is best enjoyed within a couple of days but can last up to a week in the refrigerator. Stir before using as some separation may occur. For a fruity twist, try adding diced mango or pineapple.
