Preparation
- Cut steak into bite-size cubes and pat dry with paper towels.
- Season the steak with salt and pepper on all sides.
Cooking
- Heat a heavy skillet over medium-high heat and add oil until hot.
- Add the steak in a single layer, avoiding crowding the pan. Cook for 2 to 3 minutes per side until browned. Remove the steak and keep warm.
- Lower the heat to medium, add butter to the pan, then stir in minced garlic and cook for 30 to 60 seconds until fragrant.
- Return the steak to the pan and toss with the garlic butter and any pan juices. Cook for 1 more minute to combine flavors.
- Finish with chopped fresh parsley if desired, then serve immediately.
Notes
Pat the steak dry before seasoning for better sear. Don't crowd the pan; cook in batches if needed. Use a hot pan with high smoke point oil. Add butter near the end to prevent burning. Let steak rest briefly to retain juices.
