  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 small head cauliflower, cut into florets
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • ½ tsp smoked paprika
  • ½ tsp Italian seasoning
  • to taste Salt & black pepper
  • 1 tbsp lemon juice
  • ¼ cup Parmesan cheese (optional) Skip for a vegan option
  • Fresh parsley, for garnish

Method
 

Preparation
  1. In a large skillet over medium heat, add olive oil and butter.
Cooking
  1. Add cauliflower and cook for 5-6 minutes until slightly golden.
  2. Add mushrooms and continue cooking for 4-5 more minutes.
  3. Stir in garlic, paprika, Italian seasoning, salt, and pepper. Cook for another 2 minutes until fragrant.
  4. Drizzle with lemon juice, sprinkle with Parmesan (if using), and garnish with fresh parsley. Serve hot!

Notes

This dish pairs well with quinoa or rice. For suggestions on variations, feel free to incorporate other veggies like bell peppers or spinach.
