Ingredients
  

Vegetables
  • 1 lb baby potatoes (red or gold), halved Ensure they're halved for even cooking.
  • 1 cup baby carrots (or sliced regular carrots) Cut to a uniform size for even roasting.
  • 1 cup fresh green beans, trimmed Trimmed to avoid tough ends.
Seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt Adjust according to taste.
  • ½ tsp black pepper

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and prep the vegetables. Halve the baby potatoes, ensure the carrots are of uniform size, and trim the ends of the green beans.
Mixing
  1. In a small bowl, mix together the olive oil, minced garlic, Italian seasoning, smoked paprika, salt, and black pepper.
  2. Toss the vegetables in the bowl with the seasoning mixture until they are evenly coated.
Roasting
  1. Spread the vegetables in a single layer on a rimmed baking sheet.
  2. Roast in the oven for 25-30 minutes. Stir halfway through cooking to ensure even roasting until the vegetables are tender and caramelized.
  3. Optional: finish with a squeeze of fresh lemon juice or sprinkle fresh herbs before serving.

Notes

Cut all vegetables to uniform sizes to ensure even cooking. Feel free to adjust the seasonings to suit your taste. Adding some red pepper flakes can give it a nice kick! Experiment with different vegetables like bell peppers, zucchini, or Brussels sprouts for variety.
