  • 2 cups active sourdough starter Make sure it's active for best results.
  • 3 cups all-purpose flour
  • 1.5 teaspoons salt
  • 1 cup water (lukewarm) Should be warm to the touch.
  • 4 tablespoons olive oil Divided for the dough and topping.
  • 6 cloves garlic (minced) Can adjust to taste.
Toppings
  • to taste Fresh herbs (like rosemary or thyme) Choose your favorite herbs.
  • to taste Flaky sea salt (for topping)

Method
 

Preparation
  1. In a large bowl, combine the sourdough starter, flour, salt, and lukewarm water. Mix until a rough dough forms.
  2. Add 2 tablespoons of olive oil and the minced garlic to the dough, mixing until well incorporated.
  3. Turn the dough out onto a floured surface and knead for about 5-7 minutes until it’s smooth and elastic.
  4. Place the dough in a greased bowl, cover it, and let it rise for 4-6 hours, or until doubled in size.
  5. Once risen, punch down the dough and spread it in a greased baking pan.
  6. Dimple the surface with your fingers, drizzle the remaining olive oil, and sprinkle with herbs and flaky sea salt.
Baking
  1. Allow it to rise again for 1-2 hours.
  2. Preheat the oven to 425°F (220°C) and bake the focaccia for 20-25 minutes or until golden.
  3. Let it cool slightly before slicing and enjoying.

Notes

Use an active sourdough starter for the best texture. Don't skip the rising times for optimal flavor. Experiment with various toppings like cheeses or olives for added flair.
