Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the ground beef and onion until the beef is browned.
  3. Drain any excess fat.
  4. Add taco seasoning and diced bell pepper to the skillet and mix well. Cook for an additional 2-3 minutes until the bell pepper softens.
  5. Roll out the pie crusts and cut them into circles (about 4 inches in diameter).
Assembly
  1. Place a spoonful of the beef mixture in the center of each circle. Top with cheese.
  2. Fold the dough over to create a half-moon shape and press the edges to seal.
  3. Use a fork to crimp the edges for an added design.
Baking
  1. Beat the egg in a small bowl and brush it over the top of each hand pie.
  2. Place the hand pies on a baking sheet lined with parchment paper.
  3. Bake for 20-25 minutes or until golden brown.
Serving
  1. Serve warm with salsa on the side.

Notes

For extra flavor, try adding some chopped jalapeños or black beans to the beef filling. Keep the crust cold until you are ready to bake for a flakier result. Make sure not to overfill the hand pies to prevent them from bursting while baking.
