Preparation
- Preheat your oven to 350°F (175°C). Line an 8x8 inch pan with parchment paper, leaving some overhang to lift brownies out.
- In a large bowl, stir melted butter and sugar until smooth.
- Add eggs, one at a time, stirring well after each addition. Add vanilla and mix.
- Stir in cocoa powder and melted chocolate until the mix is even.
- Add flour, salt, and baking powder. Stir just until you do not see dry flour. Do not overmix.
- Fold in nuts if you are using them.
- Pour the batter into the pan and smooth the top.
Baking
- Bake for 25 to 30 minutes, or until a toothpick comes out with a few moist crumbs. Do not bake until dry.
- Let the brownies cool in the pan for 15 minutes. Then lift them out with the parchment and cool on a rack.
- For a classic cosmic look, melt 1 cup of semi-sweet chocolate with 2 tbsp butter, spread a thin layer over cooled brownies, then press candy-coated chocolates into the top. Chill a few minutes to set.
- Cut into squares and serve.
Notes
Use good quality chocolate for better flavor, and do not overbake to ensure brownies stay fudgy. Let them cool before adding the glossy chocolate top for best results.
