Preparation and Baking
  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Wash and peel the sweet potatoes.
  3. Slice the sweet potatoes into round discs, about half an inch thick.
  4. Lay the slices on a baking sheet and drizzle olive oil over them, ensuring they are well-coated.
  5. Sprinkle salt and pepper for added flavor.
  6. Bake the sweet potato rounds for about 20-25 minutes, flipping halfway through, until they are tender and slightly golden.
Topping and Serving
  1. Once done baking, remove the rounds from the oven and let them cool for a minute.
  2. Top each round with a generous spoonful of feta cheese and drizzle honey over the top.
  3. Add chopped fresh herbs for an extra touch if desired.
