- Season with a pinch of salt and a little lemon.

- Chop cucumber, tomato, red onion, and slice olives.
- Crumble feta and chop fresh parsley.
Making the Tzatziki
- Grate cucumber and squeeze out extra water.
- Mix with plain yogurt, minced garlic, lemon juice, salt, and a little dill or parsley.
Building the Bowls
- Start with the base of rice or greens.
- Add sliced chicken and then pile on cucumber, tomato, olives, red onion, and feta.
- Spoon tzatziki over the top and finish with a drizzle of olive oil and a squeeze of lemon.
Notes
Pat the chicken dry before marinating for better sear. Let it rest after cooking. Store tzatziki separately to maintain texture.
