Ingredients
  

For the chicken marinade
  • 1 pound chicken breast boneless, skinless
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the bowl assembly
  • 2 cups cooked rice or quinoa as base
  • 1 cup diced tomatoes
  • 1 cup diced cucumbers
  • 1/2 cup diced red onion
  • 1/2 cup olives sliced
  • 1/2 cup crumbled feta cheese
For the tzatziki sauce
  • 1 cup yogurt Greek-style preferred
  • 1/2 cup grated cucumber squeeze out excess water
  • 1 clove garlic minced
  • 1 tablespoon dill fresh or dried

Method
 

Preparation
  1. Marinate the chicken in olive oil, lemon juice, garlic, dried oregano, salt, and pepper for at least 30 minutes in the refrigerator.
  2. Grill or pan-sear the marinated chicken until cooked through and charred, about 7-8 minutes per side.
  3. Once done, slice the chicken into bite-sized pieces.
  4. Prepare a base of cooked rice or quinoa in serving bowls.
Assembly
  1. Top the rice or quinoa with diced tomatoes, cucumbers, red onion, olives, and crumbled feta cheese.
  2. Drizzle the bowls with the homemade tzatziki sauce made from yogurt, grated cucumber, minced garlic, and dill.

Notes

For best results, marinate the chicken longer. Don't skip the tzatziki sauce as it enhances the dish. Use fresh herbs whenever possible. Prepare ingredients ahead for quick assembly.
