Preparation
- Heat a grill or grill pan to medium-high.
- Brush avocado halves lightly with olive oil.
- Cut each avocado in half and remove the pit.
- Place cut side down on the hot grill for 2 to 3 minutes until light char marks appear.
- Remove avocados and let cool for 1 minute.
- Scoop the flesh into a bowl.
- Add lime juice, salt, and pepper, and mash with a fork to desired texture.
- Fold in red onion, tomato, jalapeño (if using), and cilantro.
- Taste and adjust salt and lime as necessary.
- Transfer to a serving bowl and top with crumbled cotija or feta if desired.
- Serve with chips or grilled bread.
Notes
For the best taste, make it right before serving as avocado browns quickly. You can use a hot grill pan if you don't have an outdoor grill. Make sure avocados are ripe for the best texture.
