  • 1 cup Shredded cheese Cheddar or Monterey Jack work well.
  • 1 onion Chopped onions (optional) Can be added for extra flavor.
  • 2 cloves Garlic (optional) Minced garlic enhances flavor.
Toppings
  • 1 cup Sour cream For garnishing.
  • 1 cup Chopped cilantro Fresh herbs for garnish.
  • 1 cup Sliced jalapeños Optional for added heat.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Add onions and garlic for extra flavor.
  3. Drain any excess grease from the cooked beef.
  4. Add some enchilada sauce to the cooked beef and mix well.
  5. Warm the tortillas until pliable.
Assembly
  1. Take a tortilla and spoon some of the beef mixture in the center.
  2. Sprinkle cheese on top, then roll the tortilla tightly and place it seam-side down in a baking dish.
  3. Repeat this process with all tortillas.
  4. Pour the remaining enchilada sauce over the rolled tortillas and top with more cheese.
  5. Cover the dish with aluminum foil.
Cooking
  1. Bake in the oven for about 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes until the cheese is bubbling and golden.
  3. Let it cool for a few minutes before serving.

Notes

For variations, you can use ground turkey or chicken, or make a vegetarian option filled with beans and vegetables. Pair with traditional sides like rice and beans for a complete meal.
