Ingredients
  

Tortilla Preparation
  • 6 pieces Corn tortillas, cut into triangles Fresh tortillas will provide better flavor and texture.
  • 1 tablespoon Olive oil Used for drizzling over the tortillas before baking.
Sauce Ingredients
  • 2 cloves Garlic, minced Added for flavor.
  • 2 pieces Tomatoes, diced Fresh tomatoes add taste and moisture.
  • 1 cup Chicken or vegetable broth Provides moisture and flavor; be generous.
  • 1 teaspoon Cumin Adds distinct flavor.
  • 0.5 teaspoon Red chili powder Adjust to taste.
  • to taste Salt Seasoning.
Toppings
  • 1 cup Black beans, cooked Add protein and texture.
  • 1 piece Avocado, sliced For freshness.
  • Fresh cilantro, for garnish Adds brightness.
  • Queso fresco, optional, for topping Adds creaminess if desired.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet.
  2. On the baking sheet, spread the tortilla triangles evenly and drizzle them with olive oil. Bake for about 10-12 minutes, or until they are crispy and golden.
Cooking
  1. In a large skillet, heat a little more olive oil over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
  2. Stir in the diced tomatoes, chicken or vegetable broth, cumin, chili powder, and salt. Bring to a simmer and let it cook for about 5 minutes.
  3. Add the crispy tortilla triangles and black beans to the skillet, stirring gently until everything is combined and the tortillas are slightly softened.
Serving
  1. Serve hot, topped with avocado slices and fresh cilantro. Sprinkle some queso fresco on top if you desire.

Notes

You can prepare the sauce and bake the tortillas ahead of time. Just combine everything right before serving to maintain the crunch. Experiment with toppings, like sour cream or diced onions, to make the dish your own.
