  • 1 lb boneless, skinless chicken thighs or breasts Juicy when cooked.
  • 1 tbsp olive oil For sautéing chicken.
Seasoning and Extras
  • to taste salt and pepper For general seasoning.
  • 1/4 cup grated parmesan cheese Optional, for finishing the dish.
  • 1 cup spinach or bell peppers Optional, for added nutrition and flavor.
  • 1 tbsp fresh basil or thyme Optional, for enhancing flavor.

Method
 

Preparation
  1. Heat olive oil in a pan over medium heat.
  2. Sauté the chicken until golden brown and cooked through.
  3. While the chicken is cooking, boil the orzo according to package instructions.
  4. Add optional vegetables, such as spinach or bell peppers, during the last few minutes of cooking.
  5. Once cooked, drain orzo and set aside.
Assembly
  1. Combine the sautéed chicken with the orzo in the pan.
  2. Season with salt, pepper, and herbs to taste.
  3. If using, sprinkle with parmesan cheese before serving.
