  • 1 pound ground beef or turkey Use plant-based protein for a vegetarian option.
  • 1 can diced tomatoes Use fire-roasted for extra flavor.
  • 4 cups vegetable broth Chicken broth can be used for extra richness.
  • 8 ounces lasagna noodles Broken into smaller pieces.
  • 1 cup ricotta cheese Can substitute with cottage cheese if preferred.
  • 1 cup mozzarella cheese Shredded for easier melting.
Optional Vegetable Add-ins
  • 1 cup spinach Fresh or frozen.
  • 1 cup zucchini Diced.
  • 1 cup mushrooms Sliced.

Method
 

Preparation
  1. In a large pot, brown the ground beef or turkey over medium heat until cooked through.
  2. Add the diced tomatoes and vegetable broth to the pot, bringing the mixture to a simmer.
  3. Stir in the broken lasagna noodles and cook until they are tender.
  4. Finally, stir in the ricotta and mozzarella cheeses until melted.

Notes

Customize with additional vegetables, and serve with a fresh side salad or garlic bread for a complete meal. This soup is freezer-friendly and can be stored for up to three days in the fridge.
