Method
 

Preparation
  1. In a medium saucepan, combine the sugar and water. Bring the mixture to a gentle boil over medium heat.
  2. While that’s heating, mash the ripe bananas in a bowl until smooth.
  3. Once the sugar has dissolved, add the mashed bananas to the saucepan. Stir well to combine.
  4. Bring the mixture back to a gentle boil and let it cook for about 5-7 minutes, stirring frequently.
  5. Remove from heat, then stir in the vanilla extract and a pinch of salt.
  6. Allow the syrup to cool slightly before pouring it into a clean jar or bottle.

Notes

Store in the refrigerator for up to two weeks in a sealed container. Can be made with frozen bananas that are thawed and mashed.
