Honey Lime Fruit Salad

Ingredients
  

Fruits
  • 2 cups strawberries, hulled and halved
  • 2 cups pineapple, diced
  • 2 kiwis peeled and sliced
  • 1 cup grapes, halved
  • 1 unit mango, diced
  • 2 cups seedless watermelon or cantaloupe, cubed
Dressing
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey more to taste
  • 1 teaspoon poppy seeds
  • optional unit fresh mint leaves for garnish

Method
 

Preparation
  1. Wash and cut all fruit into bite size pieces. Put fruit in a large bowl.
  2. In a small bowl, mix lime juice and honey until smooth.
  3. Stir in poppy seeds, then taste and add more honey if you like it sweeter.
  4. Pour the dressing over the fruit and toss gently to coat.
  5. Chill the salad for 20 to 30 minutes to help the flavors blend.
  6. Garnish with mint leaves if desired, and serve cold.

Notes

Use ripe fruit for the best flavor. Cut fruit to similar sizes for balanced bites. Make the dressing just before serving to keep fruit fresh and firm. Chill for a short time; do not leave very long, or the fruit may get watery. Keep dressing separate if storing and toss right before serving.
