Ingredients
  

Main Ingredients
  • 3 lbs bone-in, skin-on chicken thighs
  • to taste Salt and fresh black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 2 tbsp unsalted melted butter Regular butter is fine.
  • 2 tbsp hot sauce Refer to tip for hot sauce choice.
  • 1 whole lime
  • 2 tbsp mild-flavored honey

Method
 

Preparation
  1. Preheat your oven to 450°F and line a rimmed baking sheet with aluminum foil.
  2. Season the chicken on all sides with salt, pepper, onion powder, and garlic powder.
  3. Place the chicken thighs skin-side up on the prepared baking sheet and roast for 20 minutes until slightly browned.
  4. Mix the melted butter with the hot sauce. Set aside half of this mixture for later use.
Cooking
  1. After 20 minutes, brush the chicken with the first half of the butter mixture and return it to the oven.
  2. Roast for an additional 10 to 15 minutes or until golden brown and cooked through (internal temperature should reach 165°F).
Glazing
  1. Grate the zest from the lime and slice it in half.
  2. Mix the honey and one teaspoon of lime zest with the reserved butter and hot sauce mixture. Brush this glaze over the chicken.
  3. Squeeze fresh lime juice over the top and serve immediately.

Notes

Pair with side dishes like fluffy white rice, roasted broccoli, or creamy coleslaw. For leftovers, store in a sealed container in the refrigerator for up to four days. Reheat in the oven or air fryer at 375°F for 10 minutes for best results.
