Preparation
- Preheat the oven to 400°F (200°C) or use a toaster oven.
- Slice the baguette into 1/2 inch rounds, brush each side with olive oil, and lay them on a baking sheet.
- Toast the bread until edges turn golden, about 6 to 8 minutes, then let cool.
Making Whipped Feta
- Drain the feta and break it into pieces.
- In a food processor, combine the feta, cream cheese, olive oil, yogurt or milk, lemon juice, and garlic.
- Process until smooth and whipped, scraping down the sides as needed. Taste and adjust with pepper or more lemon if needed.
Making Hot Honey
- In a small pan, warm the honey over low heat.
- Stir in red pepper flakes and warm for 1 to 2 minutes to infuse. Remove from heat and let cool slightly.
Assembly
- Spread a generous spoon of whipped feta on each crostini.
- Drizzle the hot honey over the cheese.
- Top with fresh herbs, a pinch of flaky sea salt, and a grind of black pepper.
- Serve warm or at room temperature for best flavor.
Notes
Use a good feta and drain it well for a smooth texture. Toast the bread lightly and adjust the heat of the honey to taste. Serve soon after assembly for optimum texture.
