Ingredients
  

For the Crostini
  • 1 medium baguette 1 medium baguette Sliced into 1/2 inch rounds
  • 2 tablespoons 2 tablespoons olive oil For brushing on the bread
For the Whipped Feta
  • 7-8 ounces 7-8 ounces feta cheese Block, drained
  • 2-3 tablespoons 2-3 tablespoons cream cheese For creaminess
  • 2 tablespoons 2 tablespoons olive oil For blending
  • 1-2 tablespoons 1-2 tablespoons plain yogurt or milk As needed for consistency
  • 1 squeeze Squeeze of lemon juice To taste
  • 1 small clove 1 small clove garlic, peeled For flavor
  • to taste Pepper Add to taste
For the Hot Honey
  • 1/3 cup 1/3 cup honey Warmed
  • 1/2-1 teaspoon 1/2-1 teaspoon red pepper flakes Or use chili oil for milder heat
For Garnish
  • to taste Fresh herbs (basil, thyme, or parsley), chopped For topping
  • pinch Flaky sea salt To finish
  • to taste Black pepper, ground To finish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) or use a toaster oven.
  2. Slice the baguette into 1/2 inch rounds, brush each side with olive oil, and lay them on a baking sheet.
  3. Toast the bread until edges turn golden, about 6 to 8 minutes, then let cool.
Making Whipped Feta
  1. Drain the feta and break it into pieces.
  2. In a food processor, combine the feta, cream cheese, olive oil, yogurt or milk, lemon juice, and garlic.
  3. Process until smooth and whipped, scraping down the sides as needed. Taste and adjust with pepper or more lemon if needed.
Making Hot Honey
  1. In a small pan, warm the honey over low heat.
  2. Stir in red pepper flakes and warm for 1 to 2 minutes to infuse. Remove from heat and let cool slightly.
Assembly
  1. Spread a generous spoon of whipped feta on each crostini.
  2. Drizzle the hot honey over the cheese.
  3. Top with fresh herbs, a pinch of flaky sea salt, and a grind of black pepper.
  4. Serve warm or at room temperature for best flavor.

Notes

Use a good feta and drain it well for a smooth texture. Toast the bread lightly and adjust the heat of the honey to taste. Serve soon after assembly for optimum texture.
