  • 2 large large cucumbers thinly sliced
  • 4 clementines peeled and sectioned
  • 1 small red onion thinly sliced
  • 1 cup fresh parsley or mint chopped
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice or clementine juice
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta or goat cheese optional

Method
 

Preparation
  1. Wash and slice the cucumbers thin. Put them in a large bowl.
  2. Peel the clementines and break into segments. Remove seeds if any.
  3. Add the sliced red onion and chopped parsley or mint to the bowl.
  4. In a small cup, mix olive oil, lemon or clementine juice, salt, and pepper.
  5. Pour the dressing over the cucumbers and clementines. Toss gently so fruit does not break.
  6. If you use cheese, sprinkle it on top before serving.
  7. Chill for 10 to 20 minutes, then serve cold for best taste.

Notes

Slice cucumbers thin for better mixing with clementine pieces. Use ripe clementines for the best flavor. Taste the dressing before adding, and adjust salt or lemon to taste. Add fresh herbs for additional flavor. Toss again before serving if the salad sits for a while.
