Ingredients
  

For the bread
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup oil Can use vegetable or canola oil.
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chopped rhubarb Chop into small, even pieces for best flavor distribution.
  • 1/2 cup chopped nuts Optional.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine sugar, eggs, and oil. Stir until well blended.
  3. Gradually add in flour, baking soda, and salt. Mix until just combined.
  4. Gently fold in chopped rhubarb and nuts if you are using them.
  5. Pour the mixture into a greased loaf pan.
Baking
  1. Bake for 50-60 minutes, or until a toothpick comes out clean.

Notes

For added sweetness, you can sprinkle some sugar on top before baking. Check for doneness a little early to avoid overbaking. Try adding cinnamon or lemon zest for extra flavor.
