  • 1 cup ground almonds (blanched)
  • 1 cup sugar
  • 0.5 cup butter, softened Make sure butter is soft for best mixing.
  • 3 large eggs
  • 0.5 teaspoon almond extract
  • 0.5 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a mixing bowl, cream the softened butter and sugar together until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. Stir in the almond extract and ground almonds until well combined.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Pour the batter into the prepared cake pan and spread it out evenly.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

To ensure your cake turns out perfectly, avoid overmixing the batter and check for doneness a few minutes before the timer goes off. Serve plain or dusted with powdered sugar, and pair with fresh berries or light fruit compote.
