  • 1 ripe avocado Sliced and squeezed with lemon juice to prevent browning.
  • 1 medium cucumber Thinly sliced.
  • 1 cup cherry tomatoes Halved.
  • 1/4 cup sliced almonds or toasted seeds Optional for added crunch.
  • 1/4 cup dried cranberries or sliced apples Optional for a touch of sweetness.
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 pinch salt
  • 1 teaspoon honey or maple syrup Optional for sweetness.
Optional Toppings
  • 1 cup grilled chicken or canned tuna For added protein.

Method
 

Preparation
  1. Wash and dry the greens thoroughly.
  2. Chop the greens into bite-size pieces.
  3. Slice the ripe avocado and squeeze lemon juice over it.
  4. Thinly slice the cucumber and halve the cherry tomatoes.
  5. If you like crunch, add sliced almonds or toasted seeds.
  6. Toss in dried cranberries or sliced apples for sweetness.
Dressing Preparation
  1. In a small bowl, whisk together olive oil, lemon juice, salt, and honey or maple syrup.
  2. Taste and adjust the seasoning to your preference.
Assembly
  1. Toss the chopped greens with half the dressing.
  2. Gently add in the avocado and tomatoes, tossing carefully to keep the avocado creamy.
  3. Add the remaining dressing as needed and finish with cracked black pepper.
  4. Serve immediately for the best texture.
