Ingredients
  

Main ingredients
  • 1 pound ground beef Use lean ground beef for a lighter option.
  • 8 ounces noodles, ramen, udon, or any noodle you like Cook as per package instructions.
  • 3 tablespoons soy sauce Add more if needed for taste.
  • 1 tablespoon sesame oil For a nutty flavor.
  • 1 tablespoon gochujang or chili paste Optional for spice.
  • 1 tablespoon sugar or honey Adjust according to sweetness preference.
  • 3 cloves garlic, minced For flavor.
  • 1 small onion, sliced Yellow or white onion works well.
  • 1 medium carrot, thin sliced or matchstick Adds crunch and sweetness.
  • 2 green onions sliced For garnish and added flavor.
  • 1 tablespoon sesame seeds Optional for garnish.
  • 1 tablespoon vegetable oil For cooking the beef.
  • 1 cup beef broth or water Can be substituted with water.

Method
 

Preparation
  1. Cook the noodles in a pot of boiling water until they are just soft, drain and set aside.
  2. Heat a large pan over medium heat, add vegetable oil.
  3. Add the ground beef, break it up with a spoon, and cook until brown.
Cooking
  1. Push the beef to one side, add the onion and garlic, and cook for 1 to 2 minutes until soft.
  2. Stir in the carrot and cook for 2 minutes more.
  3. Add soy sauce, sesame oil, gochujang, sugar, and beef broth, then stir well.
  4. Let the sauce simmer for 2 to 3 minutes so flavors mix and sauce thickens a little.
  5. Add the cooked noodles to the pan, toss everything so the sauce coats the noodles.
  6. Taste and add more soy or a little salt if needed.
  7. Turn off the heat, and top with green onions and sesame seeds before serving.

Notes

Cook noodles just until soft, do not overcook. For a lighter dish, use lean ground beef or replace some beef with mushrooms.
