  • 8 ounces cream cheese, softened Use room temperature for easy spreading.
  • 1 box lemon cake mix Lemon flavor recommended for best taste.
  • 1/2 cup butter, melted Drizzle slowly over the cake mix.
  • 1 packaged graham crackers, broken into pieces Sprinkle evenly over cream cheese.

Preparation
  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  2. Spread the softened cream cheese evenly on the bottom of the baking dish.
  3. Break the graham crackers into pieces and sprinkle them over the cream cheese.
  4. Pour the lemon cake mix evenly over the top, without mixing.
  5. Drizzle the melted butter slowly over the cake mix to allow it to soak in.
Baking
  1. Bake for 35 to 45 minutes until the top is golden and a toothpick comes out mostly clean.
  2. Let it cool for 15 to 20 minutes before slicing.

Notes

For a firmer, creamier texture, chill in the refrigerator before serving. This cake travels well and is great for potlucks.
