  • 1 large bunch kale, washed and tough stems removed, chopped
  • 2 tablespoons olive oil
  • 1 large lemon, juice of (about 2 tablespoons) Fresh lemon juice is recommended.
  • 1 clove garlic, minced (optional)
  • 1/4 cup grated Parmesan cheese, plus extra to finish Freshly grated is preferred.
  • 1/4 teaspoon salt, more to taste
  • 1/4 teaspoon black pepper
  • 1 teaspoon Dijon mustard (optional)
  • 2 tablespoons toasted nuts, such as pine nuts or almonds (optional) Adds crunch.
  • 1 teaspoon lemon zest (optional) For extra lemon flavor.

Method
 

Preparation
  1. Put the chopped kale in a large bowl. Add the salt, lemon juice, olive oil, and Dijon if using.
  2. Massage the kale for 2 to 3 minutes, rubbing the leaves with your hands until they soften.
  3. Add the minced garlic and grated Parmesan. Toss well so the cheese and dressing coat the leaves.
  4. Taste and add more salt, pepper, or lemon juice if you want it brighter.
  5. Sprinkle toasted nuts and lemon zest on top. Add a little extra shaved Parmesan before serving.
  6. Let sit for 5 to 10 minutes so the flavors meld, or serve right away for a fresher bite.

Notes

Tips: Massage the kale for tenderness. Use fresh lemon juice for the best flavor. Grate Parmesan fresh for better texture and flavor.
