Preparation
- Preheat your oven to 350 F and lightly grease an 8x8 inch pan or line it with parchment paper.
- In a bowl, mix the applesauce, Greek yogurt, and sugar until smooth. Add the egg whites and vanilla, stir well.
- Sift in the cocoa powder, then add the flour, baking powder, and salt. Fold until just mixed, do not overmix.
- If you like extra fudgy bites, fold in the melted dark chocolate or chocolate chips.
- Pour the batter into the prepared pan and smooth the top with a spatula.
Baking
- Bake for 18 to 22 minutes, until the top looks set but a toothpick comes out with a few moist crumbs. Do not overbake for a fudgy center.
- Cool in the pan for 15 minutes, then move to a wire rack to cool more.
- Cut into 9 or 12 squares and enjoy.
Notes
Measure flour carefully by spooning it into the cup and leveling to keep brownies tender. For extra chocolate flavor, add a teaspoon of instant espresso powder to the dry mix.
