Ingredients

Brownie Base
  • 1/2 cup unsweetened applesauce
  • 1/2 cup plain nonfat Greek yogurt For lower calories and added moisture
  • 1/3 cup light brown sugar or a sugar substitute to taste
  • 2 large egg whites
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup whole wheat flour or almond flour for lower carbs Use almond flour for lower carbs
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 2 tbsp melted dark chocolate or mini dark chocolate chips, optional For extra fudginess

Method

Preparation
  1. Preheat your oven to 350 F and lightly grease an 8x8 inch pan or line it with parchment paper.
  2. In a bowl, mix the applesauce, Greek yogurt, and sugar until smooth. Add the egg whites and vanilla, stir well.
  3. Sift in the cocoa powder, then add the flour, baking powder, and salt. Fold until just mixed, do not overmix.
  4. If you like extra fudgy bites, fold in the melted dark chocolate or chocolate chips.
  5. Pour the batter into the prepared pan and smooth the top with a spatula.
Baking
  1. Bake for 18 to 22 minutes, until the top looks set but a toothpick comes out with a few moist crumbs. Do not overbake for a fudgy center.
  2. Cool in the pan for 15 minutes, then move to a wire rack to cool more.
  3. Cut into 9 or 12 squares and enjoy.

Notes

Measure flour carefully by spooning it into the cup and leveling to keep brownies tender. For extra chocolate flavor, add a teaspoon of instant espresso powder to the dry mix.
