Ingredients
  

Vegetables
  • 2 cucumbers, thinly sliced Use fresh, crisp cucumbers for best flavor.
  • 1 pint cherry or grape tomatoes, halved Ripe tomatoes enhance the dish.
  • 1 small red or white onion, thinly sliced Choose according to your preference.
Marinade
  • 1/4 cup apple cider vinegar or red wine vinegar Adjust according to taste.
  • 2 tbsp extra virgin olive oil For a smooth flavor.
  • 1 clove garlic, minced Enhances the marinade.
  • 1 tbsp chopped fresh parsley or dill Use fresh for best results.
  • to taste salt and pepper Adjust to personal preference.
  • 1/2 tsp red pepper flakes (optional) Add for some heat.

Method
 

Preparation
  1. Wash and slice the cucumbers, halve the tomatoes, and thinly slice the onion.
  2. In a mixing bowl, whisk together vinegar, olive oil, garlic, salt, and pepper. Add red pepper flakes if using.
  3. Combine cucumbers, tomatoes, and onions in a large bowl.
Finishing
  1. Pour the marinade over the vegetables and toss gently to coat evenly.
  2. Cover and refrigerate for at least 30 minutes, preferably a few hours or overnight.
  3. Toss again before serving and garnish with fresh herbs.

Notes

Serve chilled. Consider adding crumbled feta cheese or toasted nuts for added texture. Store in an airtight container for up to 3-5 days.
