Ingredients
  

For the Filling
  • 8 oz mascarpone cheese, room temperature Keep at room temperature for easier mixing.
  • 1 cup heavy cream, cold Whipped to soft peaks.
  • 1/3 cup sugar Adjust to taste.
  • 1 teaspoon vanilla extract
For the Soaking Liquid
  • 1 cup strong green tea, cooled Whisk in matcha powder.
  • 2 tablespoons matcha powder, sifted Sift to avoid clumps.
For the Layers
  • 24 pieces ladyfinger cookies Dip briefly to prevent sogginess.
  • Cocoa powder or extra matcha, for dusting For garnish.

Method
 

Preparation
  1. Whisk matcha powder into the cooled green tea until smooth, set aside.
  2. In a bowl, beat mascarpone with sugar and vanilla until smooth.
  3. In a separate bowl, whip cold heavy cream to soft peaks.
  4. Fold the whipped cream into the mascarpone mix gently, keeping it light.
Assembly
  1. Dip each ladyfinger briefly into the matcha tea; do not soak.
  2. Arrange a layer of dipped ladyfingers in a dish and spread half of the mascarpone mix over them.
  3. Repeat with another layer of dipped ladyfingers and the rest of the mascarpone mix.
  4. Smooth the top, then dust with cocoa powder or sifted matcha.
Chilling
  1. Chill for at least 4 hours, or overnight, so the flavors set.

Notes

For best results, use high-quality matcha and do not soak ladyfingers too long. Chill well to hold shape.
