Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until it’s browned. Drain excess fat.
- Stir in the taco seasoning, black beans, corn, diced tomatoes, and cooked rice. Mix well.
- In a separate bowl, combine the sour cream and cream of mushroom soup until smooth.
Layering
- In a greased 9x13 inch baking dish, spread half of the beef mixture on the bottom.
- Layer with half of the sour cream mixture and sprinkle with half of the shredded cheese.
- Add the remaining beef mixture, followed by the rest of the sour cream mixture and cheese.
- Top with crumbled tortilla chips for a crunchy finish.
Baking
- Bake for 25-30 minutes, until hot and bubbly.
- Enjoy!
Notes
Use leftover rice to save time. Customize with your favorite ingredients. For added heat, toss in jalapeños or use spicier taco seasoning. Serve with fresh salad, guacamole, and salsa.
