  • 1 lb ground beef Use lean ground beef for less grease.
  • 1 can (15 oz) black beans, drained and rinsed Canned beans save time.
  • 1 can (15 oz) corn, drained Sweet corn adds flavor.
  • 1 can (10 oz) diced tomatoes with green chilies Adds zest and moisture.
  • 1 packet taco seasoning Can adjust amount for spice preference.
  • 2 cups cooked rice Leftover rice works well.
  • 1 cup shredded cheese (like cheddar or Mexican blend) Choose your favorite cheese blend.
  • 1 cup sour cream For creaminess.
  • 1 can (10 oz) cream of mushroom soup Can substitute with cream of chicken soup.
  • to taste Tortilla chips, for topping Provides a crunchy finish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until it’s browned. Drain excess fat.
  3. Stir in the taco seasoning, black beans, corn, diced tomatoes, and cooked rice. Mix well.
  4. In a separate bowl, combine the sour cream and cream of mushroom soup until smooth.
Layering
  1. In a greased 9x13 inch baking dish, spread half of the beef mixture on the bottom.
  2. Layer with half of the sour cream mixture and sprinkle with half of the shredded cheese.
  3. Add the remaining beef mixture, followed by the rest of the sour cream mixture and cheese.
  4. Top with crumbled tortilla chips for a crunchy finish.
Baking
  1. Bake for 25-30 minutes, until hot and bubbly.
  2. Enjoy!

Notes

Use leftover rice to save time. Customize with your favorite ingredients. For added heat, toss in jalapeños or use spicier taco seasoning. Serve with fresh salad, guacamole, and salsa.
