Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 2/3 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
Fruits
  • 1 cup mixed berries (fresh or frozen)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with butter.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the mixed berries until evenly distributed.
  6. Divide the batter into the prepared muffin tin, filling each cup about 2/3 full.
Baking
  1. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack.

Notes

Use fresh berries for the best flavor. Tossing frozen berries in flour can help prevent them from sinking. Don't overmix to avoid dense muffins.
