Preparation
- In a medium pot, combine sugar, cocoa powder, butter, and milk. Stir over medium heat until the butter melts and the sugar dissolves.
- Bring the mixture to a rolling boil, and let it boil for 1 minute, stirring so it does not burn.
- Remove the pot from heat. Stir in peanut butter if using, and add vanilla extract and a pinch of salt.
- Add the oats and mix well until all oats are coated with the chocolate mix.
- Drop spoonfuls of the mixture onto a sheet of parchment paper or wax paper. Let them sit at room temperature until set, about 20 to 30 minutes.
- Store cookies in an airtight container once they are firm.
Notes
Boil for the full minute for best results. You can also serve with a cold glass of milk or add a scoop of vanilla ice cream. For nut-free, skip the peanut butter and add extra oats.
