Ingredients

  • 2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 3 cups old fashioned oats Use old fashioned oats for best texture.
  • 1/2 cup peanut butter Optional, for added flavor.
  • 1 pinch salt

Method
 

Preparation
  1. In a medium pot, combine sugar, cocoa powder, butter, and milk. Stir over medium heat until the butter melts and the sugar dissolves.
  2. Bring the mixture to a rolling boil, and let it boil for 1 minute, stirring so it does not burn.
  3. Remove the pot from heat. Stir in peanut butter if using, and add vanilla extract and a pinch of salt.
  4. Add the oats and mix well until all oats are coated with the chocolate mix.
  5. Drop spoonfuls of the mixture onto a sheet of parchment paper or wax paper. Let them sit at room temperature until set, about 20 to 30 minutes.
  6. Store cookies in an airtight container once they are firm.

Notes

Boil for the full minute for best results. You can also serve with a cold glass of milk or add a scoop of vanilla ice cream. For nut-free, skip the peanut butter and add extra oats.
