Main Ingredients
  • 1 pound kielbasa Cut into 1/2 inch slices
  • 1 pound small potatoes Washed and chopped into halves
  • 1 each red bell pepper Cut into chunks
  • 1 medium red onion Cut into wedges
  • 3 cloves garlic Mince finely
Honey Garlic Sauce
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with foil or parchment for easy cleanup.
  2. Cut the kielbasa into 1/2 inch slices. Wash and chop the potatoes into halves, red bell pepper into chunks, and the red onion into wedges. Mince the garlic.
Mixing Sauce and Assembling
  1. In a bowl, mix together the olive oil, honey, soy sauce, minced garlic, salt, and black pepper.
  2. Put the kielbasa and veggies on the baking sheet in a single layer. Pour the sauce over everything, and toss until well coated. Spread in an even layer.
Cooking
  1. Roast in the oven for 20 to 25 minutes, stirring once halfway through, until the potatoes are tender and the kielbasa is browned.
  2. For additional caramelization, broil for 1 to 2 minutes at the end, watching closely.
Serving
  1. Remove from oven, sprinkle with chopped fresh parsley or green onion, and serve warm.

Notes

Cut vegetables to similar sizes for even cooking. Avoid crowding the pan to allow pieces to brown. If potatoes are slow to cook, parboil them for 5 minutes first. Use a rimmed baking sheet to prevent sauce from spilling. Adjust honey or soy sauce to taste.
