Main Ingredients
  • 4 pieces Salmon fillets
  • 1 cup Orzo pasta
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 2 tablespoons Olive oil
  • 3 cloves Garlic Minced
  • 4 cups Chicken broth
  • 4 cups Fresh spinach
  • to taste Salt
  • to taste Pepper
  • to garnish Fresh parsley For garnish

Method
 

Cooking Salmon
  1. Heat olive oil in a large skillet over medium heat.
  2. Season the salmon fillets with salt and pepper. Place the salmon skin-side down in the skillet. Cook for about 4-5 minutes until golden.
  3. Flip the salmon and cook for another 3-4 minutes, then remove from the skillet and set aside.
Cooking Orzo
  1. In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
  2. Add orzo, chicken broth, lemon juice, and lemon zest. Bring to a simmer and cook for about 10-12 minutes or until the orzo is tender and most of the liquid is absorbed.
  3. Stir in fresh spinach until wilted.
Assembling the Dish
  1. Return the salmon to the skillet, spooning some of the orzo over the fillets, and cook just until the salmon is heated through.
  2. Garnish with fresh parsley and serve.

Notes

Use fresh ingredients for the best taste. Adjust lemon flavor to preference. Store leftovers in an airtight container in the fridge for up to 2 days.
