Ingredients

Chicken Thighs
  • 4 pieces bone-in chicken thighs Skin-on for extra crispiness
Seasoning
  • 2 tablespoons olive oil To rub on the chicken
  • 1 teaspoon salt To taste
  • 1 teaspoon black pepper To taste
  • 1 teaspoon garlic powder Optional seasoning
  • 1 teaspoon paprika Optional seasoning

Method

Preparation
  1. Preheat your oven to 425°F (220°C) to get a hot blast for crispy skin.
  2. Pat the chicken thighs dry with paper towels to ensure crispy skin.
  3. Rub each thigh with olive oil and season with salt, pepper, garlic powder, and paprika.
  4. Place the thighs skin-side up on a baking sheet or in a shallow roasting pan, giving them enough space.
Cooking
  1. Roast in the oven for 30 to 40 minutes, until the skin is golden and a meat thermometer reads 165°F at the thickest part.
  2. Let the thighs rest for 5 minutes before serving.

Notes

Dry the skin well before seasoning to help it crisp. Make sure to space the thighs apart to avoid steaming. A meat thermometer ensures proper cooking.
