  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon

  • 2 medium ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
Add-ins
  • 2 cups fresh peaches, diced Use ripe, fresh peaches for best flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the dry ingredients: flour, sugar, baking powder, and cinnamon.
  3. In a separate bowl, mix together the wet ingredients: mashed bananas, melted butter, eggs, and vanilla extract.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. Stir in diced peaches, ensuring they are well distributed.
  6. Pour the batter into a greased loaf pan, smoothing the top.
  7. Bake for about 50-60 minutes or until a toothpick comes out clean.
  8. Allow it to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For best results, use ripe peaches. Don’t overmix the batter; a few lumps are okay. Adjust baking time based on your oven.
