Preparation
- Preheat your oven to 350ยบ F and grease your baking pan.
- In a large mixing bowl, beat together the yellow cake mix, peach jello, eggs, vegetable oil, and vanilla extract until just combined. Be careful not to overmix.
- Gently fold in the chopped peaches.
- Pour the batter into your prepared pan and bake for about 45 minutes, or until a toothpick comes out clean.
- Let the cake cool completely after baking.
Making the Frosting
- In a saucepan, combine brown sugar, heavy cream, and butter, and bring to a boil.
- After boiling for one minute, remove from heat and stir in vanilla and salt.
- If using an ice bath, set the pot in the ice while stirring continuously to prevent graininess.
- Once it thickens, beat until fluffy and spread over the cooled cake.
