For the Cake
  • 1 box yellow cake mix Opt for a good quality brand.
  • 1 box peach jello Enhances flavor and texture.
  • 3 large eggs At room temperature for best results.
  • 1/2 cup vegetable oil For moisture.
  • 1 teaspoon vanilla extract Adds flavor.
  • 2 cups chopped fresh peaches Ripe but not mushy.
For the Frosting
  • 1 cup brown sugar Dark brown works best for richness.
  • 1/2 cup heavy cream Adds creaminess.
  • 1/4 cup butter Unsalted preferred.
  • 1 teaspoon vanilla extract For flavor.
  • 1/4 teaspoon salt Enhances sweetness.

Method
 

Preparation
  1. Preheat your oven to 350ยบ F and grease your baking pan.
  2. In a large mixing bowl, beat together the yellow cake mix, peach jello, eggs, vegetable oil, and vanilla extract until just combined. Be careful not to overmix.
  3. Gently fold in the chopped peaches.
  4. Pour the batter into your prepared pan and bake for about 45 minutes, or until a toothpick comes out clean.
  5. Let the cake cool completely after baking.
Making the Frosting
  1. In a saucepan, combine brown sugar, heavy cream, and butter, and bring to a boil.
  2. After boiling for one minute, remove from heat and stir in vanilla and salt.
  3. If using an ice bath, set the pot in the ice while stirring continuously to prevent graininess.
  4. Once it thickens, beat until fluffy and spread over the cooled cake.

Notes

Store leftovers in the fridge for up to five days, tightly covered.
