Ingredients
  

For the crust
  • 2 cups all-purpose flour
  • 1 cup brown sugar (packed)
  • 1 cup butter (softened) Make sure your butter is softened for easy mixing.
For the pecan topping
  • 5 eggs
  • 1 cup dark corn syrup
  • 2/3 cup sugar
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 2 cups chopped pecans For an extra flavor boost, toast the pecans lightly before adding them to the filling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, brown sugar, and softened butter. Mix until the dough comes together.
  3. Press the dough into the bottom of a greased 9x13 inch baking dish.
  4. Bake the crust for about 15 minutes or until it becomes lightly golden.
Pecan Topping
  1. In a large bowl, beat the eggs. Then add the dark corn syrup, sugar, vanilla, and salt. Mix well.
  2. Fold in the chopped pecans into the mixture.
  3. Pour the pecan mixture over the baked crust and spread it evenly.
  4. Bake for an additional 25-30 minutes or until the topping is set and bubbly.
  5. Allow the bars to cool completely before cutting into squares.

Notes

Pecan Pie Bars can be served warm or at room temperature. You can also top them with a scoop of vanilla ice cream or a dollop of whipped cream for a special treat. They are delightful on their own too! To store Pecan Pie Bars, place them in an airtight container and keep them in the refrigerator for up to a week. You can also freeze them for longer storage.
