Preparation
  1. Put the pineapple and cucumber in a large bowl.
  2. Add the thin red onion slices.
  3. In a small bowl, mix lime juice and honey, stir until smooth.
  4. Pour the dressing over the pineapple and cucumber, toss gently.
  5. Add mint, salt, and pepper, and mix once more.
  6. Let the salad sit for 5 to 10 minutes so the flavors come together, then serve.
