Preparation
- Gather all ingredients including eggs, pizza sauce, mozzarella, pepperoni, olive oil, salt, and pepper.
- Optional: If using, chop onion and bell pepper.
Cooking
- Heat a small skillet over medium heat and add olive oil.
- If using onion or bell pepper, cook them for 2 to 3 minutes until soft.
- Add pepperoni or cooked sausage and cook for 1 minute to warm and release flavor.
- Spread a few tablespoons of pizza sauce in the pan.
- Crack eggs into the pan over the sauce or beat them and pour in for scrambled style.
- Season with salt and pepper, reduce heat to low, cover, and cook until egg whites are set and yolks are soft, about 4 to 6 minutes.
- For firmer yolks, cook a bit longer.
- Sprinkle shredded mozzarella over the eggs, cover, and let cheese melt for about 1 minute.
Serving
- Finish with chopped basil, oregano, or red pepper flakes if desired.
- Serve hot with toast or a side salad.
