Dough Ingredients
  • 4 cups 4 cups (500 g) all-purpose flour, plus extra for dusting Use unbleached flour for better flavor.
  • 1.5 cups 1 1/2 cups (360 ml) warm water About 105–115°F / 40–46°C — comfortably warm to the wrist.
  • 2.25 tsp 2 1/4 tsp (1 packet / 7 g) active dry yeast Make sure yeast is fresh.
  • 2 tbsp 2 tbsp (25 g) granulated sugar Gives that signature slight sweetness.
  • 2 tsp 2 tsp (12 g) fine sea salt
  • 2 tbsp 2 tbsp (28 g) unsalted butter, melted and slightly cooled Adds tenderness and flavor.
  • 2 tbsp 2 tbsp (30 ml) olive oil For dough and pan — helps brown the crust.
  • 1 tbsp 1 tbsp (15 ml) honey Optional — for a slightly richer flavor and deeper color.

Method
 

Preparation
  1. Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it heats.
  2. Lightly oil two 12-inch round pizza pans or a baking sheet with 1 tsp olive oil each.
  3. Have a small bowl of flour handy for dusting your work surface.
Making the Dough
  1. In a large bowl, stir the warm water with sugar and sprinkle the yeast over the top. Let it bloom for 5–10 minutes until foamy.
  2. Add the melted butter, olive oil, honey (if using), and half of the flour. Stir until a shaggy dough forms.
  3. Turn the dough onto a lightly floured surface and knead, adding remaining flour as needed, for about 8–10 minutes.
  4. Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp kitchen towel, and let rise in a warm spot for 1–1.5 hours, or until doubled in size.
Assembling and Baking
  1. Punch down the dough gently to release air and divide it into two equal pieces.
  2. On a floured surface, stretch or roll each piece into a 12-inch circle. Transfer to your prepared pans.
  3. Brush the rim lightly with olive oil and add your sauce, cheese, and favorite toppings.
  4. Bake on the preheated stone/pan for 12–16 minutes, rotating halfway, until the crust is puffed and golden.
  5. Let cool for 3–5 minutes, slice, and serve hot.

Notes

For a chewier crust, swap 1 cup of all-purpose flour with bread flour. It's also possible to freeze the prepared dough for later use.
