Preparation
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it heats.
- Lightly oil two 12-inch round pizza pans or a baking sheet with 1 tsp olive oil each.
- Have a small bowl of flour handy for dusting your work surface.
Making the Dough
- In a large bowl, stir the warm water with sugar and sprinkle the yeast over the top. Let it bloom for 5–10 minutes until foamy.
- Add the melted butter, olive oil, honey (if using), and half of the flour. Stir until a shaggy dough forms.
- Turn the dough onto a lightly floured surface and knead, adding remaining flour as needed, for about 8–10 minutes.
- Place the dough in a lightly oiled bowl, cover with plastic wrap or a damp kitchen towel, and let rise in a warm spot for 1–1.5 hours, or until doubled in size.
Assembling and Baking
- Punch down the dough gently to release air and divide it into two equal pieces.
- On a floured surface, stretch or roll each piece into a 12-inch circle. Transfer to your prepared pans.
- Brush the rim lightly with olive oil and add your sauce, cheese, and favorite toppings.
- Bake on the preheated stone/pan for 12–16 minutes, rotating halfway, until the crust is puffed and golden.
- Let cool for 3–5 minutes, slice, and serve hot.
Notes
For a chewier crust, swap 1 cup of all-purpose flour with bread flour. It's also possible to freeze the prepared dough for later use.
