  • 1 pound ground meat (beef, turkey, or chicken) Sautéed with taco seasoning
  • 2 cups cooked rice Use your choice of long-grain or brown rice
  • 1 can beans (black or pinto) Drained and rinsed
  • 1 cup shredded cheese Choose a cheese that melts well
  • 1 cup vegetables (bell peppers, onions, etc.) Your favorite fresh vegetables

Method
 

Cooking and Assembling
  1. Start by sautéing your choice of ground meat in a skillet with taco seasoning until cooked through.
  2. In a baking dish, layer the cooked rice, beans, the seasoned meat, and your favorite vegetables.
  3. Top it all off with shredded cheese for that gooey goodness.
  4. Place the casserole in the oven and bake until everything is hot and the cheese is bubbly.

Notes
